Chorizo butter


Ingredients

Butter, chorizo.
Preparation: 10 minutes (plus 5 hours for chilling)

You know how it goes, it's almost Christmas and you've either run out of money or run out of ideas and desperately decide to bake biscuits or make chutneys or jam as extra Christmas presents. Not that chutneys and jam and biscuits are bad Christmas presents - I'd far rather receive some biscuits made with love than something shop-bought and full of preservatives and additives - but for most people it's a hassle to organise during an already pressured time of year.
Well enter clarified, flavoured butter. For the meat-lover in your life, this will make the most fabulous bacon sandwich bread spread they've ever had. And for roasting potato wedges? Fuhgeddaboudit! Delicious. And all it takes is 10 minutes, a pan, a knife and some kilner jars.


1) Slice and dice your chorizo (it's up to you what ratio you use to butter - I tend to use about 1/4 of a chorizo per 500g of butter but even if you only have a knobby end of chorizo left, you can still render a surprising amount of colour and flavour out of it!) and add it to a cold pan.


2) Gently heat it, dry until some of the fat begins to seep out, then add the butter. Taking a spatula, stir constantly as the butter begins to melt and the chorizo begins to sizzle.


3) Do not allow the butter to burn, turn down the heat once it begins to sizzle.


4) After around 2 minutes, pour the butter through a sieve to separate the chorizo pieces and then scoop off the "froth" that you will see on the surface of the butter.


5) Pour the now clarified butter into your kilner jars and seal. Chill in the fridge and dish them out as presents!

Stuffed pumpkin: Beef & chorizo mole


Ingredients

Chorizo, beef, white onion, dark chocolate, tomato puree, mixed beans, red wine, cumin, coriander, cayenne pepper, olive oil 


Preparation: 45 minutes

Halloween is a comin' and I'm filled with festive ideas for serving food. These TEENY PUMPKINS are adorable but there's not a lot of good eating in them, so they're merely a receptacle for this amazingly rich, beef and chorizo Mexican Mole. If you're a vegetarian - here's how to make my Quorn mole.

1) Slice the top from your munchkin pumpkin and carve out the flesh and seeds.

2) Roast in the oven for 25 minutes and set aside.

3) To make the filling - melt 4 squares of dark chocolate in a pan and add 1 finely chopped white onion and a glug of olive oil. When the onions have just begin to soften add the beef and chopped chorizo and stir thoroughly until the chocolate has coated the onions and meat. Add in 1 tablespoon of tomato puree, a teaspoon of Cayenne pepper and a teaspoon of chopped coriander. Stir thoroughly and add in a glug of red wine with the mixed beans - red kidney beans, pinto beans, cannellini beans and haricot beans (Tesco sell "taco beans" for convenience) and stir well.

4) Spoon the filling into the munchkin pumpkin and bake for a further 15 minutes before serving.

Potato linguine with chorizo‏


  
Ingredients

1 maris piper potato, 100g passata tomatoes, 50g butter, chorizo 

Serves: 4 Preparation: 30 minutes

This recipe is unusual for me in that I am using equipment that few people are likely to have. This blog is aimed at people who want to learn to make very simple, but gorgeous food using ingredients that are widely available and do not require speciality equipment. I recently bought a spiralizer, which cuts vegetables into... you've guessed it... long spaghetti like strands. If you have such a thing - potato makes a wonderful alternative to pasta for those who struggle with intelerancies. The simple buttered tomato sauce is thickened with the starch from the potatoes and works really well with chorizo.


1) Slice the chorizo and sautee in the butter. 


2) Spiralize the potato and blanch in boiling water for 2 minutes. Strain well and transfer into the pan of butter and chorizo.


3) Stir through until the butter has melted, then add the passata tomatoes and allow to simmer for about 20 minutes until the potato is soft enough to eat, but not so soft that it breaks up.
