Sweet potato chilli

Ingredients
3 sweet potatoes, 300g Quorn mince, 400g mixed beans: kidney beans, pinto beans, haricot beans, cannellini beans and black eyed beans, 1 cup rice,
2 tablespoons Rachel's Organic Greek yoghurt, olive oil, 1/2 tsp each of coriander, cumin, smoked paprika, ground ginger.

Serves: 4 Preparation: 1 hour

A good chilli brings tears to the eyes; tears of spice, tears of joy. This approach involves roasting the sweet potatoes in dry spices, infusing the soft flesh with raw flavour power, then adding beans and Quorn to give this a protein and texture kick. Creamy yoghurt rice to round it off makes this a perfect supper when you need a little warmth and comfort.

1) Peel the sweet potato and cut into chunks. Add to an ovenproof dish with a lid. Add the spices and shake the dish with the lid on. Add a good glug of olive oil and shake again to coat the sweet potato with spices and roast in the oven at 220 degrees for 45 minutes.

2) Add the rice to a pan of hot water and simmer for 20 minutes. Strain and set aside to cool.

3) Stir in the beans and Quorn and return to the oven for a further 15 minutes. Stir the yoghurt into the rice and serve with the hot chilli.

Quorn corn chowder with noodles

Ingredients

1/2 litre vegetable stock, 200g sweetcorn, 1 cup Quorn, 100g noodles, 1 red and 1 green chilli pepper.

Serves: 4 Preparation: 20 minutes

Corn chowder is a thing of beauty - sweet, spicy, light and cheap but nutritionally it really doesn't contain anything that makes a meal. I like to give it a protein kick with some Quorn "chicken" pieces and some noodles to

1) Finely dice the chilli peppers and add to a pan

2) Add the vegetable stock and sweetcorn and stir through.

3) Simmer for about 5 minutes until the sweetcorn has cooked, strain the sweetcorn from the liquid before blending thoroughly and parsing through a sieve to separate the sweetcorn flesh from the skin.

4) Add the pureed sweetcorn back to the vegetable stock along with some more sweetcorn, the Quorn pieces and the noodles and simmer for 5 minutes.

Sausage & smoked cheese lasagne

Ingredients
Layer 1) 10 cherry tomatoes, 1 tsp butter. Layer 2) 4 Quorn sausages, 50g smoked cheese, 50ml buttermilk. Layer 3) 1 tbsp butter, 1 tbsp flour, 50ml milk, 1 egg.
Lasagne sheets/8 oz pasta flour, 4 eggs, 1 tsp olive oil, 10g cheddar.

Serves: 2 Preparation: 1 hour (plus 2-5 for chilling the pasta dough)

Smoked cheese is something that I rarely cook with. The heady flavour can easily overpower the other ingredients, but if you get it right it's a fabulous addition to meat dishes or in my case, being a vegetarian - Quorn!
This twist on lasagne (for my classic lasagne recipe, click here) uses the sharp freshness of cherry tomatoes to cut through the smoked cheese.

1) To make the lasagne sheets: Pour the flour, olive oil, a good pinch of salt, 3 eggs and 1 egg yolk into a bowl and kneed with your hands until you have a firm dough. Wrap this in cling film and chill in the fridge for 2-5 hours.

2) Slice the Quorn sausages in half lengthways and roast in the top of the oven for 10 minutes at 200 degrees. Set aside.

3) Slice the cherry tomatoes in half and then into quarters and shuck the seeds with your thumb. Discard the seeds and add the tomato flesh to a pan along with a teaspoon of butter and simmer gently for 5 minutes. Spoon into your lasagne dish.

4) Dust a worktop with pasta flour and roll out the dough into a sheet 1/3 of a centimetre thick. Cut out rectangles of pasta and roll these through a pasta machine (or continue using a rolling pin if you don't have one). Add your first layer to the top of the tomatoes and press down to ensure that each part of the pasta is in contact with the tomatoes. Add the Quorn sausages, cut side down on top of the pasta.

5) Grate the smoked cheese and add to a pan with the buttermilk. Stir through until a smooth sauce has formed and pour over the Quorn sausages. Top with a layer of pasta, pressing down to ensure that each part is on contact with the sauce.

6) Melt 1 tablespoon of butter in a pan and stir a tablespoon of plain flour into it to form a roux. Take off the heat and whisk the egg into the roux along with the milk. Whisk through for about 5 minutes and pour over the lasagne. Top with grated cheddar and bake the lasagne in the oven for 10 -15 minutes until the cheese is golden and bubbly.

Moroccan roast vegetable salad

Ingredients

1 sweet potato, 1 carrot, 1 tsp garam marsala, 1 tsp coriander, olive oil, 2 oranges, 1/4 cup sultanas, 1 cup wild rice, Quorn "chicken" pieces

Serves: 2 Preparation: 1 hour

Well my little toasties, it has been quite some time since I have updated this blog. Everything Goes With Toast will be 2 years old in March, which is coincidentally the same month I will be giving birth to my Starchild, and the same month David Bowie releases his first album in 10 years. A month of excitement all round! Due to the whirlwind of pregnancy I have neglected this horribly, but I hope this lovely Eastern spiced rice salad will make up for it.

1) Peel the carrot and cut into chunks, then cut the sweet potato into equal sized chunks. Add to a casserole dish along with the juice and zest of 1 orange, a teaspoon of garam marsala and a teaspoon of olive oil. Put the lid on the dish and shake thoroughly to coat the vegetables, then roast at 180 degrees for 30 minutes, shaking again after 15 minutes.

2) Add the Quorn pieces and shake to coat with flavour. Roast for a further 30 minutes.

3) Juice the other orange and put the sultanas into the juice to plump up. Set aside.

4) Rinse the rice and put on to boil. When the rice is cooked, strain the water away and add the sultanas and orange juice.

5) Add the coriander to the casserole dish and shake to coat the Quorn and vegetables, then serve the vegetables with the rice.

Stuffed Cabbage: Mexican mole

Ingredients

Quorn Mince, 1 white onion, dark chocolate, tomato puree, mixed beans, red wine, cumin, coriander, cayenne pepper, olive oil, Rachel's organic Greek yoghurt, mozarella, savoy cabbage.
Serves: 6 Preparation: 1 hour

I often get dejected emails from people who cannot or choose not to eat products containing flour and I'm always surprised by how many of them do not ever think of wrapping the contents of a sandwich in iceberg lettuce rather than bread or a tortilla, or don't think of using a razor thin shaving of courgette or other vegetables to replace pasta in tagliatelle or cannelloni. The same goes for the humble cabbage leaf. I would far rather use savoy cabbage over vine leaves - they taste fantastic, they're more robust and easier to handle and the fabulous wrinkly texture is perfect for stuffing because all the little nooks and crannies are filled. This dish is a wonderful alternative to tortillas when making enchiladas.

1) Melt 4 squares of dark chocolate in a pan (I used some chilli and lime chocolate from BonBon to give this some extra heat) and add 1 finely chopped white onion and a glug of olive oil

2) When the onions have just begin to soften add the packet of Quorn mince (you could use some cooked, drained beef mince if you are not a vegetarian) and stir thoroughly until the chocolate has coated the onions and beef.

3) Add in 2 tablespoons of tomato puree, a teaspoon of Cayenne pepper and a teaspoon of chopped coriander. Stir thoroughly and add in a glug of red wine.

4) Add in the mixed beans - red kidney beans, pinto beans, cannellini beans and haricot beans (Tesco sell "taco beans", 2 cans of which are perfect) and stir well

5) Add salt, tomato puree and chopped chillis to taste

6) Add the greek yoghurt and grated mozarella into a milk pan with a pinch of salt and stir on a low heat until the cheese is incorporated. Pour over the tortilla rolls and add extra cheese and a sprinkling of cayenne pepper.

4) Blanch the cabbage leaves in hot, salted water for 5 minutes, then plunge into ice-cold water so that the leaves retain their colour.

5) Dry thoroughly (I found shaking them outside before patting them with kitchen roll to be the easiest way) and spoon 2 tablespoons of the mixture into the centre. Roll up as you would a burrito and place seam side down in a casserole dish - as below.

6) Rather than completely covering the cabbage, I thought a tablespoon and a half or so on top of each leaf to be sufficient. Bake in the oven for 10 minutes until the sauce bubbles and serve!

Southern Comfort fajitas

Ingredients

300g Quorn steak strips (or beef steak strips), southern comfort, tomato passata, 1 white onion, iceberg lettuce, soured cream, butter, jalepenos, cumin, cheddar, tortillas, Guacamole: 3 avocados, jalepeno, lime, coriander, soured cream, avocado oil.
Serves: 6 preparation: 20 minutes

I have never been a fan of Southern Comfort - the smell turns my stomach and I find the taste too sweet. Usually when cooking Mexican food I use tequila but a lack of tequila and the dregs of a bottle of SoCo that someone brought to a party recently made me wonder if the fruity, spicy flavour would work well as an alternative. Turns out it did! Enjoy...

1) To make guacamole, see my previous recipe.

2) Marinate the Quorn in Southern Comfort for about 5 or 10 minutes (it's like a sponge and will soak it right up - if you're using beef you might want to make it an hour beforehand).

3) Peel and finely dice the onion and sautee in a little butter until completely soft. Add the Quorn and any excess Southern Comfort and cook off the alcohol.

4) Add a little tomato passata, cumin and some chopped jalepenos to taste

5) Serve with shredded iceberg lettuce, grated cheddar, guacamole and some soured cream in a tortilla.

Sausage & mustard mayonnaise salad

Ingredients

3 Quorn sausages, 1 lemon, 1 tsp grainy mustard, 4 eggs, lemon juice, salt, pepper, 1 pint vegetable oil.

Serves: 2 Preparation: 10 minutes

Quorn is a funny old thing. When I was just starting out as a vegetarian the key thing for me was to fit in, to prove that I wasn't a total weirdo and I could still eat all the same things as my family did. So at Sunday lunch I'd have a Quorn chicken/turkey breast. When they had a lasagne or shepherd's pie, I'd have the same but with Quorn mince. And on Saturday mornings I could have quorn sausage sandwiches, at parties Quorn sausage rolls and when making curry or stir fry I could use Quorn chicken pieces. As you'll know from reading this blog, I rarely use Quorn as a source of protein now - preferring to get creative with beans and nuts and pulses but occasionally I do and this quick snack makes a great side dish or picnic snack. You can make it with "real" sausages too!
1) To make your own mayonnaise - separate 4 egg yolks from the whites (discard the whites) and put in a large clean bowl to whisk (or use the whisk attachment on your blender if you have one). Add the lemon juice/vinegar, salt and pepper and whisk thoroughly, adding the oil ONE DROP at a time until the mayonnaise is thick and glossy. You don't have to use all the oil - I like it quite thick but if it's too thick you can always add a little warm water to thin it back down again.

2) Grill the sausages, brushed with a little oil to help crisp the "skin", allow them to cool a little and then slice them into chunks.

3) Add a good squeeze of lemon and teaspoon of mustard into the mayonnaise and stir the sausages through it.

Lasagne

Ingredients

Quorn mince (or beef mince), passata tomatoes, 1 white onion, basil oil, butter, basil, oregano, parsley, garlic, red wine, double cream, white flour, salt, 8oz pasta flour, 1 tsp olive
oil, 6 eggs, mozarella, cheddar.

Serves: 2 Preparation: 1 hour (+5 for preparation)

Lasagne is amazing, you don't need Garfield to tell you that! Layers of delicious bolognaise and creamy bechamel, all topped with golden bubbling cheese... this is comfort food at its best.

1) Pour 8 ounces of grade 00 flour (pasta flour), 1 teaspoon of olive oil, a good pinch of salt, 3 whole eggs and 1 egg yolk into a bowl and kneed with your hands until you have a firm dough. Wrap this in cling film and chill in the fridge for 2-5 hours.

2) Put half a bulb (yes that's bulb, not clove!) of garlic into a roasting tin and roast in the oven for 30 minutes.

3) Finely dice one white onion and sautee in a tablespoon of basil oil and a teaspoon of butter until they have completely softened. Add a glass of red wine, some finely chopped basil, oregano and parsley and stir through.

4) If you are making this with meat - brown the mince and strain off all of the meat juices before adding it to the pan. If you are making this with Quorn - add the Quorn mince from frozen and stir through.

5) Stir the passata tomatoes through the Quorn mince and season with salt and freshly ground black pepper to taste.

6) Stir through on a low heat for a further 2-3 minutes and then remove the roast garlic from the oven. Once roasted, it can be squeezed from the skin like a puree and stirred through the sauce.

7) Melt 2 tablespoons of butter in a pan and stir a tablespoon of plain flour into it to form a roux. Whisk 2 eggs into the roux and finish with a generous dash of cream or milk. Whisk through for about 5 minutes and set aside.

8) Roll out the pasta on a floured surface and level out with a rolling pin. Either feed it through a pasta machine or with the rolling pin until you are left with a thin sheet. Cut sheets to the size of your lasagne dish.

9) Spoon a layer of bolognaise into an ovenproof dish and top with a sheet of pasta. Continue to layer the bolognaise and bechamel sauce until the dish is filled. Top with grated mozarella and cheddar.

10) Bake covered for 10 minutes and uncovered for 5 to allow the top to crisp and then serve.

Mole Quesadillas

Ingredients

Quorn Mince, 1 white onion, dark chocolate, tomato puree, mixed beans, red wine, cumin, coriander, cayenne pepper, olive oil, Rachel's organic Greek yoghurt, cheddar/Mexicano cheese, 1 tortilla.
Serves: 2 Preparation: 1 hour

Another great way of serving Mexican Mole when you have leftover tortillas - this is one of my ultimate hangover remedies.

6) Fold a tortilla in half and spoon the Mole and some grated cheese into the centre. Press the edges closed and grill until the tortilla is crisp and the cheese melted. Serve cut into wedges with a dollop of greek yoghurt or soured cream.

Enchiladas

Ingredients
Quorn Mince, 1 white onion, dark chocolate, tomato puree, mixed beans, red wine, cumin, coriander, cayenne pepper, olive oil, Rachel's organic Greek yoghurt, mozarella, 6 tortillas.
Serves: 6 Preparation: 1 hour

6) Slice each tortilla in half and add 2 tablespoons of the Mole to the centre of each. Roll the tortilla into a tube and rest them side by side in an ovenproof dish. This mixture should fill 12 tortilla halves.

7) Add the greek yoghurt and grated mozarella into a milk pan with a pinch of salt and stir on a low heat until the cheese is incorporated. Pour over the tortilla rolls and add extra cheese and a sprinkling of cayenne pepper.

8) Bake in the oven for 20 minutes at 200 degrees.

Bolognaise stuffed marrow

Ingredients
Quorn mince (or beef or lamb mince), passata tomatoes, 1 white onion, basil oil, butter, basil, oregano, parsley, garlic, red wine, marrow, parmigiano.
Serves: 4 Preparation: 35 minutes
If you let a courgette keep growing you end up with a marrow - a juicy, fresh and delicious marrow that is perfect for stuffing with something heady like my bolognaise.

1) Wash the marrow thoroughly and cut off the ends. Slice the marrow in half lengthways and then depending on the length of the marrow cut in half sideways. The average marrow will give you four pieces suitable for stuffing.

2) Using a spoon or a flexible filleting knife, remove the core where you may see seeds developing like a melon. For future reference, these seeds are edible, but the flesh you remove from the marrow centre can be discarded for this recipe.

3) Put the marrow pieces on a baking tray along with a whole bulb of garlic and roast them both for 30 minutes.

4) To make the bolognaise: Finely dice one white onion and sautee in a tablespoon of basil oil and a teaspoon of butter until it has completely softened. Add a glass of red wine, some finely chopped basil, oregano and parsley and stir through.

5) If you are making this with meat - brown the mince and strain off all of the meat juices before adding it to the pan. If you are making this with Quorn - add the Quorn mince from frozen and stir through.

6) Add the passata tomatoes and season with salt and freshly ground black pepper to taste. Leave to simmer on a low heat until the garlic has been roasted - once roasted, it can be squeezed from the skin like a puree - mince the garlic in a press to ensure it can be evenly stirred through.

7) Spoon the bolognaise onto the baked marrow pieces and sprinkle freshly grated parmeggian over the top. Bake for a further 5 minutes in the oven and serve sprinkled with freshly topped parsley.

Sausage, leek & goats cheese pasta

Ingredients
2 cups dischi volanti pasta, 100g goats cheese, 3 Quorn sausages, 1 leek, butter, teaspoon of parsley

Serves: 4 Preparation: 20 minutes

The goats cheese in this recipe acts as more of a glaze than a sauce which allows the sausage and leek to stand out as a gorgeous combination of flavours. This recipe is a great vegetarian option but you could use "real" sausages if you wish.

1) Set the pasta to boil in salted water for 10-12 minutes whilst you prepare the other ingredients

2) Cut the sausage into half centimetre slices and set aside.

3) Finely slice the leek and begin to sautee in a little butter. As it begins to soften, stir through the sausages and sizzle, stirring frequently.

4) Once the pasta has cooked, stir through the sausages and leeks and add the goats cheese. I used coeur de lion la bouche goats cheese which gives a lovely, creamy sauce. Season with a little salt and pepper and serve, sprinkled with finely chopped parsley.

Potato skins stuffed with Mexican mole

Ingredients

   Potato, cheddar, soured cream, Quorn
Mince, 1 white onion, dark chocolate,
   tomato puree, mixed beans, red
wine, cumin, coriander, cayenne pepper, olive oil

I make mashed potatoes in 3 different ways depending on the time I have, or the type of mash I'm making.
On the occasions where I bake the potatoes in the oven I cannot resist saving the skins to stuff them with scrummy things.

1) Cover the potatoes in foil and bake for 1 and a half hours.

2) Scoop the potato from the skins ensuring that you leave a thin layer of potato to give the shell some integrity. Set the potato aside to cool.

3) Melt 4 squares of dark chocolate in a pan (I used some chilli and lime chocolate from BonBon to give this some extra heat) and add 1 finely chopped white onion and a glug of olive oil

4) When the onions have just begin to soften add the packet of Quorn mince (you could use some cooked, drained beef mince if you are not a vegetarian) and stir thoroughly until the chocolate has coated the onions and beef.

5) Add in 2 tablespoons of tomato puree, a teaspoon of Cayenne pepper and a teaspoon of chopped coriander. Stir thoroughly and add in a glug of red wine.

6) Add in the mixed beans - red kidney beans, pinto beans, cannellini beans and haricot beans (Tesco sell "taco beans", 2 cans of which are perfect) and stir well. Add salt, tomato puree and chopped chillis to taste.

7) Spoon the mole into the potato shells, top with grated cheddar and bake in the oven for 10 minutes. Serve with a dollop of soured cream and chopped coriander.

Spaghetti Bolognaise

Ingredients

Spaghetti, Quorn mince (or beef or lamb mince), passata tomatoes, 1 white onion, basil oil, butter,
basil, oregano, parsley, garlic, red wine, peccorino cheese
I must admit, I change my recipe for spaghetti bolognaise every year - sometimes adding a little spice, sometimes adding sun dried tomatoes or olives. I have continued to fine-tune it but I think that after 16 years of cooking it I have finally rested upon the perfect combination of flavours.

1) Put half a bulb (yes that's bulb, not clove!) of garlic into a roasting tin and roast in the oven for 30 minutes.

2) Finely dice one white onion and sautee in a tablespoon of basil oil and a teaspoon of butter until they have completely softened. Add a glass of red wine, some finely chopped basil, oregano and parsley and stir through.

3) If you are making this with meat - brown the mince and strain off all of the meat juices before adding it to the pan. If you are making this with Quorn - add the Quorn mince from frozen and stir through.

4) Put your spaghetti on to boil in hot, salted water.

5) Stir the passata tomatoes through the Quorn mince and season with salt and freshly ground black pepper to taste. Leave on a low heat until the spaghetti is cooked, then strain the spaghetti and add to the pan.

6) Stir through on a low heat for a further 2-3 minutes and then remove the roast garlic from the oven. Once roasted, it can be squeezed from the skin like a puree - mince the garlic in a press and stir through the spaghetti.

7) Serve with shaved pecorino and a sprinkling of parsley.

Soba noodles with plum sauce

Ingredients
1lb plums, 50g sugar, 3 cloves garlic, 4 scotch bonnet chillis, ginger root, lime juice, yoghurt, soba noodles, spinach, red bell pepper, courgette, Quorn chicken/chicken
1) To make the plum sauce, cut the plums in half and remove the stones. Add into a saucepan with 50g of sugar and a cup of water. Stir through until the sugar has dissolved.

2) As the plums begin to soften, peel and slice a root of ginger and add into the pan along with 3 crushed garlic cloves and a squeeze of lime.

3) Remove the seeds and stalks from 4 scotch bonnet chillis, slice in half and add into the pan. Stirring frequently, allow the mixture to reduce and the sauce to thicken, then pass through a sieve - leaving the ginger and the chilli and fruit skins seperate from the liquid.

This sweet, fiery sauce is best served in a stir fry but would also go wonderfully with duck, or as a marinade for kebabs like my butternut squash and beetroot kebabs.

4) Add the Quorn chicken pieces to a pan along with a generous helping of the plum sauce and some julienne slices of courgette and bell pepper.

5) Cook the soba noodles in hot salted water for 5 minutes, then add to the pan along with a few generous handfuls of spinach.

6) Stir through until the sauce has coated everything and the spinach has just begun to wilt, then serve topped with yoghurt. Personally I think Rachel's Organic Greek style coconut yoghurt is absolutely PERFECT for this dish.

Moussaka

Ingredients
Aubergine, rosemary, parmigiano, cheddar, cream, eggs, cinnamon, passata, flour, butter, basil oil, onion, garlic, lamb/Quorn mince, salt, red wine
1) Slice your aubergines and lay the slices in a colander. Sprinkle salt on the aubergines and set aside.

2) Dice the onion, crush 2 garlic cloves and add into a pan with a drizzle of olive oil and some finely chopped rosemary. As the onions begin to soften add a glug of red wine and stir through. Leave on the hob until the liquid reduces.

3) If you are using Quorn mince, add straight into the pan with the other ingredients. If you are using lamb, brown the mince in a seperate pain, drain and then add to the onions.

4) Add a teaspoon of cinnamon and stir in some passata tomatoes, then spoon the mince into an oven-proof dish.

5) The salt will have drawn the bitter liquid from the aubergines, rinse the liquid, pat the aubergines dry and brush with a little olive oil. Dry fry, turning frequently until the aubergines are meltingly soft. Layer onto the mince.

6) Melt 2 tablespoons of butter in a pan and stir a tablespoon of plain flour into it to form a roux. Whisk 3 eggs into the roux and finish with a generous dash of cream. Pour the sauce over the aubergines and sprinkle with grated cheese.

7) Bake in the oven for 20 minutes and serve, sprinkled with parmeggian

Thai green curry

Ingredients
Quorn chicken pieces, coconut milk, thai basil, coriander, coriander seeds, peas, shallots, garlic, green and red chillis, lemongrass, lime juice, thai ginger/galangal, cumin.
1) To make Thai green curry paste soften the lemongrass in lime juice, then either blend or grind in a mortar and pestle along with the galangal, coriander seeds, cumin, garlic and finely diced shallots. The number of chillis that you add should be to taste. A true thai curry paste will use about 30 green chillis but if you're not great with spices I would go for 6-8.

2) To make the curry sauce separate the cream from the coconut milk (turn your tin upside down before opening and pour the milk out, or spoon the cream from the top and leave the milk in the tin) and spoon into a hot wok.
Cook on a high heat, stirring continually until it has reduced by 1/4.

3) Add 3 or 4 spoons of the thai paste to the coconut cream and stir through.
Add the Quorn chicken pieces (or real chicken of course!) and some chopped red chilli for contrast. Stir through.

4) Add some peas and the rest of the coconut milk. Simmer for 10 - 15 minutes and stir through the finely chopped coriander and thai basil.

5) Serve with wild rice and naan bread.

Mexican mole

Ingredients
Quorn Mince, 1 white onion, dark chocolate, tomato puree, mixed beans, red wine, cumin, coriander, cayenne pepper, olive oil

Serving suggestion: I served this on top of a baked sweet potato with some 200,000 Scoville Mexican cheese (spicy goodness!) but this is a really versatile dish - try it in a taco stuffed with lettuce, cucumber, soured cream and grated cheese, with rice, with nachos or in a burrito with salsa and guacamole.
I also like to bake it in the oven topped with sweet potato mash, or layered with sliced potatoes.

Moroccan spiced pastries

Ingredients
1 Potato, 1 carrot, spinach, feta, sultanas, Quorn chicken-style pieces, cumin, onion powder, cinnamon, turmeric, cumin, black pepper, coriander, butter, Jus-Rol™ puff pastry
1) Ordinarily I make my own pastry but it was 2 for 1 on Jus-Rol™ in Tesco so I cheated today. To make puff pastry yourself - I swear by Gordon Ramsey's recipe.

2) Peel and cube the potatoes and carrots and parboil them in a pan for 10 minutes

3) Grind cumin, turmeric, coriander, black peppercorns, onion powder and cinnamon in a mortar and pestle, melt a tablespoon of butter in a mixing bowl and stir in the spices.

4) Roughly chop the spinach leaves and stir them into the spiced butter along with the sultanas and Quorn chicken pieces.

5) Strain the parboiled potatoes and carrots and add to the other ingredients.

6) Cut strips of pastry and spoon the mixture into the centre. Top with feta and roll the pastry over, pinching the ends together to seal the parcel.

7) Dust with flour and bake in the oven for 20 minutes.

8) Serve - these go perfectly with hummus!
