Spinach scramble

Ingredients
2 pieces Brioche, butter, 2 eggs, 40g spinach leaves.
Serves: 1 Preparation: 5 minutes

Spinach is one of my favourite ingredients of all time and something I eat almost every day. Ordinarily I bring out the flavour with nutmeg or liven it up with goats cheese but sometimes there's nothing better than the fresh clean taste of naked spinach. This is a perfect breakfast.

1) Add the spinach to a pan with a teaspoon of butter and stir through on a low heat for about 30 seconds until it begins to soften.

2) Crack 2 eggs into the pan and stir through rapidly for 2 minutes until it begins to scramble.

3) Serve the eggs over buttered briche and sprinkle liberally with cracked black pepper.
